ALAMBIQUE SERRANO
This Oaxacan Rum made from the cane variety Java this batch #1 is fermented for 6-10 days. Distillate one is a column still of 800 litters. It is then aged for 30 months in ex-coganc barrels. Distillate two is a pot still of 200 liters then aged for 9 months in virgin French oak barrels and rested 8 months in open topped demijohns. The two distillates are then blended together to create this beautiful batch 1. If you enjoy rum you will definitely appreciate the complexity of Alambique Serrano.
